Krystal’s Catteloni

I am a huge fan of one dish meals and this recipe brings all of your food groups into one tasty piece of pasta.

Ingredients:
Box of Catteloni
1 lb turkey
1 cup frozen chopped spinach(drained & thawed)
1 cup ricotta or cottage cheese
1/3 cup wheat germ
1/2 a medium red onion diced
2 cloves of chopped garlic
1 cup shredded cheddar or mozzarella cheese
1/2 jar of your favorite pasta sauce or salsa


Method:

  1. After you chop all of your veggies and drain the spinach. In a medium bowl mix all of the ingredients (except the shredded cheese & pasta sauce) together. Then stuff the uncooked catteloni with a fork (my husband says this is ridiculous but I think it is easy??) you can also use giant shells and stuff those.
  2. Lay them flat in a casserole dish (you can make two layers - I usually try for one in a big dish unless I am making a ton then I do two layers in a smaller dish.
  3. Pour sauce all over the stuffed catteloni making sure to coat them well. Then cover evenly with the shredded cheese. (The idea is to create an insulating ‘lid’ to keep the moisture in and cook the pasta)
  4. Put in the oven at 400 F for about 45 min.

Dinner is served!
