Muffins are beautiful. Â Muffins are fine! Â I like muffins; I could eat them all the time…. oh, wait. Â That’s sandwiches.
Anyhow, muffins are a great treat and a great snack and, if you make ‘em right, a great meal!
We have a favourite muffin recipe that is a quick and easy base for any additions. Â That means that it makes a great “fill-in-the-blank” muffin! Â Blueberry? Â Yes. Â Ham and cheese? Â Yes. Â Apricot? Â Yes. Â Chocolate Chip? Â Yes. Â Savoury Cheese? Â Yes. Â Apples and Cinnamon? Â Yes.
We’ve tried all of those and they are always a fast and fabulous muffin!
Preheat oven to 400 degrees F.
Mix together:
2 cups flour
1/4 cup sugar
3 1/2 tsp baking powder
1/2 tsp salt
Mix together and then add to the dry ingredients:
1 egg
1 cup milk
1/4 cup vegetable oil
Then, stir only until just combined. Â Fill greased (or lined) muffins cups. Â Bake at 400 for 20 – 25 minutes.
Depending on what kind of muffins we are going to create, we usually add them in with either the dry ingredients or the wet. Â For example, spices and cheese go in with the dry, fruit goes in afterwards, sugar topping goes on once they are in the muffin tray.

Don’t forget that there is a great family event happening on Saturday, August 14th!  David Williams, from TRU, will be leading a kid-focused tour of the Horticulture Gardens at TRU.  Bring some water and a hat and maybe a picnic lunch, as we meet at House 10 (by the CAC) at 10am to start our tour.  Please RSVP if you are planning on attending, just so that we can guess how many hand lenses we need to provide.  However, if Saturday morning rolls around and you are looking for something to do, you are welcome to just show up, as well!
