Red Velvet Pancakes: Kidz In the Kitchen

Red Velvet Pancakes!!?  Why don’t mind if I do!

So. good.  Super delicious and fun to look at and eat.  They would be PERFECT for Valentine’s Day!!

2 cups of white flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

3 tablespoons granulated sugar

4 tablespoons unsweetened cocoa powder

2 large eggs

1-1/2 cups buttermilk (but I didn’t have any so I used 1 Tbsp vanilla yogurt, 1 Tb lemon juice and water to 1 1/2 cups)1/2 cup sour cream (but I had none, so I used 1/2 cup vanilla yogurt)

2 teaspoons red food coloring

4 teaspoons vanilla (I didn’t use any, as I had used vanilla yogurt)

Standard pancake dealio…

Mix the dry

(clean the mess)

Mix the wet

(clean the mess, again)

Add the two together and mix until just blended with no flour clumps.

Pour onto griddle.

Cook until brown (or brownish-blackish-red, as they are red pancakes).

Smile.

Devour.  We sure did!

I even found a recipe for vegan ones!
