Kira is Mom to a young man and a little lady.  She shares this terrific recipe with some fabulous healthy additions.



1 cup of all pupose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup sugar (a little less)
1/2 cup *unpacked* brown sugar
1 egg
2 apples (grated, heated in microwave for 1 min. and pureed) OR 3/4 cups of unsweetened apple sauce
1 can chick peas
1 tsp vanilla
2 cups of quick oats
1/2 cup of chocolate chips….okay, maybe 3/4 cup!!

Oven to 350

In a medium bowl, wisk flour, baking powder, baking soda, salt and cinnamon together.

Drain and rinse chick peas.  Puree the peas with the apple sauce until desired texture reached. (I like there to be a few small chunks of peas still in the mixture)

Using a mixer, add the sugars and apple sauce/chick pea mixture on medium speed. Add egg and vanila.  Mix, on medium still, until combined.

By hand, mix the quick oats until just combined.  Lastly, and, according to my 5 year old the most important, add the chocolate chips.

Drop heaping tablespoon on pan lined with parchment paper.  These do not melt down like regular cookies, so you can place very close together.  Bake
for about 12-15 minutes.  Wait a couple minutes to transfer to wire rack.

Feel good about your little people (and you) having a few more of these nutritious treats than you might normally allow!
