Kira is Mom to a young man and a little lady. She shares this terrific recipe with some fabulous healthy additions.

1 cup of all pupose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup sugar (a little less)
1/2 cup *unpacked* brown sugar
1 egg
2 apples (grated, heated in microwave for 1 min. and pureed) OR 3/4 cups of unsweetened apple sauce
1 can chick peas
1 tsp vanilla
2 cups of quick oats
1/2 cup of chocolate chips….okay, maybe 3/4 cup!!
Oven to 350
In a medium bowl, wisk flour, baking powder, baking soda, salt and cinnamon together.
Drain and rinse chick peas. Â Puree the peas with the apple sauce until desired texture reached. (I like there to be a few small chunks of peas still in the mixture)
Using a mixer, add the sugars and apple sauce/chick pea mixture on medium speed. Add egg and vanila. Â Mix, on medium still, until combined.
By hand, mix the quick oats until just combined. Â Lastly, and, according to my 5 year old the most important, add the chocolate chips.
Drop heaping tablespoon on pan lined with parchment paper. Â These do not melt down like regular cookies, so you can place very close together. Â Bake
for about 12-15 minutes. Â Wait a couple minutes to transfer to wire rack.
Feel good about your little people (and you) having a few more of these nutritious treats than you might normally allow!

i’ve made chick pea cookies before too! They are awesome!!
