This is a great little recipe and it is super easy to get your kids involved.  My 4 year old did everything except place the asparagus into the oven and handle the hot baking sheet.

There is also some great local asparagus available around town at this time of year!

 

 Ingredients

Asparagus

Olive oil

Minced garlic

Balsamic vinegar

Feta Cheese

1)Preheat the oven to 450.

2)Using your hands snap the ends off the asparagus.  My 4 year old loved doing this and the best part is that you don’t need a knife!



3)Spread the asparagus onto a baking sheet in a single layer, drizzle with olive oil and add the minced garlic (I used pickled garlic). Using your hands roll the asparagus around on the cooking sheet to coat with the garlic and the oil.

4)Put it into the hot oven for 12 to 15 minutes.  As soon as your remove the asparagus from the oven drizzle the balsamic vinegar over top.  (I carefully supervised this step to make sure she did not touch the hot baking sheet). If the sheet is still hot it will caramelize it on the asparagus a bit and then sprinkle with feta.

5)Eat with your hands!  Or if you are a more civilized home, serve on plate and use utensils.    ENJOY!
