I must say that I am a big fan of “good old fashioned chocolate cake.”

The good thing with this cake is that it doesn’t use any eggs and it is still so moist! Plus it’s super easy and quick!

Wacky Chocolate Cake
1 1/2 cp flour
1 cp sugar
3 tbsp cocoa
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
1 tsp vinegar
5 tbsp vegetable oil
1 cp cold water

In a large bowl mix flour, sugar, cocoa, soda and salt. Make 3 wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened. Pour into 8×8 Inch pan. Bake at 350F for 25-30 minutes. OR 12 cupcakes for 18 mins or until a toothpick comes out clean.

The icing is Butter Icing and is as follows:
3 cups Icing Sugar
6 tbsp butter/margarine
1/2 tsp vanilla extract (almond flavour works too)
1/4 cp of milk
colour of your choice
Mash together sugar and butter.  Add extract and the milk and whip until smooth.
All topped with garden strawberries. Yum!
