Mop It Up!: Norwex Mop Review

Now, I will admit that I am not the best housekeeper in the world.  I tend to let messes get… well… messy. I’ve been known to just leave things until I really can’t stand it anymore before I clean it up.  As such, don’t look too closely at my kitchen floor.  I’m a corner-sweeper.  You know?  The kind of person that just sweeps the crumbs into the corner until the end of the day when I pick up the dust pan and get rid of it?  Well, I guess I used to be a corner sweeper.

Chicken Enchiladas: Kidz in the Kitchen

There are some recipes in our house that get made over and over and over.  This is one of them.  It takes a bit of work but you can freeze it or have it as leftovers.  This is also a great party food as it makes lots of good eats!

Chicken Enchiladas (makes 10)

Chicken:

8 chicken thighs (boneless, skinless)

chillies (to taste)

hot sauce (to taste)

Cut the chicken into small pieces and fry in a saucepan with chillies and hot sauce.  Set aside.

Pepper Mix:

Assorted Green, Red and/or yellow Peppers (fresh or frozen)

½ large Onion (or one small one)

1 tBsp ground Cumin

2 cloves Garlic

Sautee onions in a frying pan with garlic, add the peppers and cumin.  Sautee until soft.  Add cooked chicken and set aside.
