While testing out the Low GI diet, I googled a lot. I found these delicious crackers and have now mixed them up a number of times. With cheese. With brie. With veggies. With hummus. They are a new regular in our diet and fix that craving for a cracker in a delicious, low-carbohydrate way.
I’ve changed them a little and have found that I can add all kinds of seeds and grains to the mix and they still taste great!!
I’ve also discovered that it is much easier to bake them all on one sheet pre-scored, and then break them apart when it comes time to flip. I’m all about the time-saving!!
