Orange Blueberry Muffins: Kids in the Kitchen

I love this recipe: it’s an old family favourite.

2 1/2 cups white flour

1/4 cup sugar

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1/2 cup hard margarine or butter

1 cup plain yogurt

1 Tbsp frozen orange juice concentrate, thawed

2 eggs, lightly beaten

2 tsp grated orange rind

1 1/4 cup fresh or lightly thawed blueberries

In a large bowl, mix the dry ingredients.  Cut the butter into the mixture until it resembles crumbs.

In a small bowl, mix the wet ingredients.  Combine wet and dry until just combined.

Gently fold in the blueberries.

Add batter to 12 greased muffin tins to make large muffins.  Bake 400 degrees for 20 – 25 minutes.
