Zucchini Nachos: Kidz In The Kitchen

One delicious spring and summer treat in our house… Zucchini Nachos.

Growing up, my parents always had a bountiful harvest of zucchini – some of the biggest I’ve ever seen, actually.  I got used to having zucchini in everything (chocolate zucchini cake, lemon zucchini cookies, zucchini nachos…).  I learned (very quickly) to love it.

Zucchini Nachos are one appetizer that my kids love to help prepare.  They can spoon out salsa and grate cheese.  Actually, my four-year-old could also slice the zucchini if I would let him.  They also enjoy this healthy and savoury snack.

Here’s how you make them…

Thinly slice one zucchini into rounds (about 1/2 cm thick)

Spread them out onto a cookie sheet

Spoon salsa onto the top, as much as is desired (or as will stay on the zucchini round)

Spread grated cheese over the top of each round

Bake until the cheese is melted and the zucchini is soft (usually at 400 F for about 10 minutes in the middle rack)
