Today, she shares with us, Gluten Free & A Paleo Pumpkin Pie!

…I was on a mission to get a pumpkin pie made for Thanksgiving and I’m pretty sure from the reaction of my taste testers…I nailed it! 

The key was getting the crust made to fool even the hard core pie lovers. It was pretty simple…I wanted to make it easy for anyone to do once they had the G-Free Flour blended up!

All I did was follow this basic pie dough recipe, used my favorite pumpkin pie filling recipe and viola! Some of the best pumpkin pie I’ve made! Very clean and fresh tasting with the hint of sweetness…

When I decided to become a guest contributor to Kamloopsparents.com, I thought no problem: I love to bake with my kids.  The problem … I generally use the same old recipes (banana bread anyone!)

Zucchini Gingerbread Muffins?  Success!
1 cup dark brown sugar
1/4 c black strap molasses
1/2 c applesauce
1 c vanilla yogurt
3 eggs, beaten
1 big zucchini… about 3 cups grated
1/2 c oat bran
1/3 c ground almonds
2 heaping tbsp ground flax
3 c whole wheat flour
1 tbsp cinnamon
2 tsp ground ginger
1 tsp nutmeg
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
